Place ginger, 1 whole jalapeno, celery, cumin into oil. Allow to caramelize.
Place tomato paste, and add rest of spices.
In a medium saucepot with half the shortening and one of the veggie stocks. Reduce until shortening is fully incorporated.
Fan tortillas into dip and stack onto large plate.
