This is a great recipe for when you get to the end of the payweek/fortnight/month and you don't really have enough of any one thing to make anything in particular. It is a great way to use up all the left over odds and ends of veggies that you have in the fridge. You can serve it with pasta, rice, couscous, quinoa, on rolls, toast, or even just on its own. The best part is, it's quick, it makes HEAPS and is as cheap as chips!
Peel the onion, sweet potato, carrot and garlic.
Drain and rinse the beans.
Throw all veggies except the tomatoes into your food processer with the blade attachment. Blitz until it is as finely (or roughly) chopped as you want it.
Heat the oil in a large pot and dump the veggie mix in. Sweat if off for a couple of minutes, then add the tomatoes. Simmer for another 10 minutes and serve!
I love this for dinner when I need something super quick and easy or am too tired to mess about. It is really healthy as it is a great mix of veg, and you can put whichever vegetables you want in. Just adjust how many tins of tomatoes you need to get the sauce to the consistency you want.
