Home made egg roll recipe suitable for kids. It's a bit of work but kids love to help with the wrapping of the egg rolls.

1. saute the garlic in the 1 tablespoon of oil. Add sesame oil and ginger and cook for one minute.
2. Add tofu (or chicken), cabbage, and carrots, stirring often until soft, (about 10 minutes). Stir in soy sauce. Turn off heat and let cool.
3. Lay an egg roll wrapper diagonally on a cutting board. spread cooled filling into center. Fold bottom corner over filling. Fold the two sides over the center, sealing with a dab of water. Tightly roll the remaining egg roll and seal with a dab of water. Continue until filling is used or wrappers are gone.
4. Heat the 1/4 cup oil in a large skillet or wok. carefully lower 4 or 5 egg rolls into oil. Fry until golden brown on each side, about 3 minutes on each side. Adjust heat as necessary and watch carefully - they will burn without warning. Remove and drain.
5. Serve with soy or sauce of choice for dipping.
