A lovely and fluffy cupcake mixture that can be made with the minimal amount of fuss!
Preheat the oven to 200 degrees celcius/gas mark 6.
Put all the ingredients except for the milk in the processor, and then blitz until smooth. Pulse while adding milk down the funnel, to make a soft, dropping consistency.
Fill the 12 cupcake cases. Cook for 10 - 15 minutes.
It will look like there isn`t enough mixture, but trust me, for standard cases they will fill just enough to let you put some icing on as well.
