Grease 13x9x2" baking dish. Spread hashbrowns evenly on the bottom. Sprinkle with cheese, meat, onions, green chilies, etc.
In medium bowl, whisk together eggs, evaporated milk, and salt/pepper. Pour over the potato mix in pan. Freeze if desired.
To prepare, thaw and preheat oven to 350. Bake (uncovered) 40-45 minutes or until center appears set. Cool for 5-10 minutes before serving, for eggs to set.
