Put all ingredients in a large pan and simmer gently until all ingredients are a pulp. Stir often to make sure it doesn't stick to the bottom of the pan & burn.
Remove from heat and pass through sieve.
Return sauce to heat, boil for a couple minutes and put in sterilized jars and seal.
Allow a few days to mellow and it'll be ready to use in all its many ways.
