Made the recipe here https://www.wildmeat.co.uk/blogs/recipes/chicken-with-walnuts-and-pomegranate except:
- this recipe is enough for 2 good servings. I used boneless thighs which were easier to handle. about 500 gm chicken and the rest of the weight in carrots ( thick slices) , added with the chicken
-Started with toasted walnuts. Make sure they are processed to a paste indeed as it is important for the structure of the sauce
-Omitted the sugar
- The walnuts were simmered on grade 4 on the large burner covered by the perforated lid for the designated amount
-Added a cube of chicken bouillon when adding the molasses et al.
- Replaced golpar with mahlep
Be sure to check the stew after 15 minutes to make sure it is not burning)
- Garnished it with fresh pomegranate seeds (a whole one per 2 servings) and chopped coriander or spring onions
-Served with plain basmati rice
