Rodman) With summer right around the corner (I live in Florida, Summer is always right around the corner), I thought I would share my favorite cold tortilla filling. In a large bowl, combine the beans, green and red peppers, onions, scallions, lime juice, cilantro, oil and jalapeno. Serve immediately or chill until ready to serve. Servings: 4 Cal: 170, Fat: 1.6g (8.4% of fat) this is with the oil, Fiber: 5.2g. We just stuff this in tortillas with a little fat free sour cream and enjoy.
