Threading firm fish cubes and colourful vegetables on skewers scores on several fronts. Not only does the food look good, but it is also easy to cook and serve.
COOK'S TIP
Try baby corn cobs instead of mushrooms and broccoli or one of the new brassicas in place of the cauliflower.
Cut the fish fillets into large and even-size chunks.
In a large mixing bowl, stir together the lemon juice, ginger, chopped green chillies, fresh
coriander, mint, ground coriander and salt. Add the fish chunks, cover and leave to marinate for about 30 minutes.
Cut the red and green peppers into large squares and divide the cauliflower into individual florets.
Preheat the grill (broiler) to hot.
Arrange the peppers, cauliflower florets, button mushrooms and cherry tomatoes alternately with the fish pieces on four skewers
Brush the kebabs with the oil and any remaining marinade. Transfer to a flameproof dish and grill (broil) for 7-10 minutes, turning occasionally, or until the fish is cooked right through.
Garnish with lime quarters, if wished, and serve the kebabs on a bed of yellow rice.
