Suggest a better description1. In a large pot or Dutch oven, cook the chopped bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the bacon fat in the pot.
2. Add the butter to the pot with the bacon fat. Once melted, add the chopped onion, garlic, celery, and carrots. Cook, stirring occasionally, until the vegetables are softened, about 5-7 minutes.
3. Stir in the diced potatoes and cook for another 2-3 minutes.
4. Pour in the fish or vegetable broth and add the bay leaf and dried thyme. Bring the mixture to a simmer and let it cook for about 10-15 minutes, or until the potatoes are tender.
5. Add the chunks of fish to the pot and simmer gently for another 5-7 minutes, or until the fish is cooked through and flakes easily with a fork.
6. Stir in the heavy cream and season the chowder with salt and pepper to taste. Allow it to heat through for a few more minutes, but do not let it boil.
7. Remove the bay leaf from the chowder. Taste and adjust seasoning if necessary.
8. Ladle the fish chowder into bowls, garnish with the crispy bacon and chopped fresh parsley, and serve hot.
