French Classic
1. Place fish and win in frying pan, cook over a low heat for about 10 minutes or until fish is just tender. Drain, flake fish, remove any bones. Boil, steam or microwave spinach until just tender.
2. Heat butter in saucepan, add flour, cook, stirring constantly, for 1 minute, gradually add milk, stir constantly over heat until the mixture boils and thickens. Reduce heat, add cream and cheese, continue stirring 1 minute, stir in anchovies, add fish.
3. Place half the spinach over bases of greased ovenproof dishes, divide fish mixture evenly amongst dishes. Top with remaining spinach.
4. Sprinkle with combined crumbs and extra cheese. Bake in moderate oven for about 30 minutes or until lightly browned.
Can be made up to the stage of baking several hours ahead. Silver beet may be substituted for English spinach. Can cook in 6 (1 cup capacity) ovenproof dishes or one large ovenproof dish.
