Add all ingredients except cheese to crockpot. Set on low heat. Cook 5-6 hrs, stirring occasionally.
Or use Dutch Oven, covered and cook over medium heat, stirring occasionally (or heat, then place in oven). Beans may be more likely to stick to stewpot.
When you serve, sprinkle with vegan cheese.
May also add diced green onions.
Dont' forget cornbread.
