Like french onion soup, in a tart

In a 12-inch skillet, melt 3 tbsp unsalted butter on medium-high
To pan, add 2 large sweet onions, thinly sliced. Season with salt. Cook 20-25 mins. until carmalized, stirring occasionally. If onions brown too quickly, reduce heat and add a splash of water to the pan.
Remove leaves from 2 sprigs thyme; discard stems. Stir thyme into onion mixture. Cook 30 sec. - 1 minute. Remove pan from heat. Prehat oven to 400 degrees. Line a baking sheet with parchment paper.
Untoll refrigerated pie crust onto prepared baking sheete. Spread onion mixure over crust, leave 1 1/2 inch border.
Sprinkle 3/4 cup grated Gruyere cheese over onion mixutre. Fold the pie crust edges over the filling and brush with more melted butter. Bake 20-25 minutes, until crust is golden brown. Garnish with chopped chives or more thyme leaves, if desired.
