Makes two 8-oz. portions.
1) In a 1-cup liquid measuring cup, combine 1/4 cup warm water (105°F-115°F) and the yeast. Let the mixture stand 5 minutes or until foamy.
2) Add flour, sugar, adn 1/2 tsp. fine sea salt to the large bowl of a food processor; pulse five times to combine.
3) Stir an additional 1/2 cup warm water into the yeast mixture. While pulsing the food processor, gradually pour the yeast mixture then 2 Tbsp. olive oil through the feed tube. Continue to pulse until the dough pulls away from the sides of teh bowl adn just begins to form a ball. (If the dough isn't coming together, add 1-2 tsp. warm water, 1 tsp. at a time, adn pulse until it just comes together in a ball.)
4) Lightly flour a work surface or cutting board. Transfer dough to the work surface; knead briefly (about 10 times) until dough is smooth and slightly sticky. Shape dough into a ball, place in a large oiled bowl, and cover with plastic wrap. Set aside in a warm place to rise 1 1/2 to 2 hours or until doubled in size.
5) Divide dough in half, about 8 oz. each; gently shape dough halves into balls, then flatten into thick disks. Wrap each dough disk in plastic rap or cover with a damp towel; let rest up to 30 mintues. (To make ahead, wrap and refrigerate the disks overnigt. Bring to room temperature before rolling ou the dough as directed.)
