Home Made Flour tortillas with rendered pork lard
Stir 1 teaspoon salt into the water until dissolved. Add flour and pork lard to food processor then run food processor and slowly add water mix until dough comes together. A couple minutes are all it takes. Remove dough and sprinkle flour on work surface and on dough so you can work it into a cigar shape. Cut in half and each half cut in half again until you have 12 pieces. Roll into balls and put on a plate and cover with plastic. Let rest for 30 minutes. Dust surface and dough for rolling your tortilla, Press into a symmetrical circle and roll out with rolling pin starting in the center of circle then rolling away from you and turn 1/4 turn until the tortilla is about 7-8 inches.
Heat cast iron skillet to medium and place tortilla in skillet. You will hear some sizzling and then bubbles will form in the dough (The more bubbles the better) after about 45 seconds it will brown, turn over and cook the other side another 45 seconds. Place cooked tortillas into a cloth lined basket. Tortillas will finish their cooking in the basket steaming one another. Once cooled tortillas are ready to reheat and serve.
