In a large bowl, combine both flours, baking powder, baking soda, sugar and salt. In separate bowl, combine egg yolk, buttermilk, water and butter. Add wet to dry, and combine to blend. In a small bowl beat egg whites until they form soft peaks, then fold into batter. Heat griddle to med-high heat, portion 1/4 cup batter onto hot griddle. Cook 2-3 min until bottom is browned, flip and cook another 2 min, until both sides are browned.
