Suggest a better descriptionPat chicken dry. Pour olive oil in baking dish/pan Add chicken pieces and lightly coat with the oil.
Sprinkle with vinegar and shallots; sprinkle half the herbs over the chicken. Roast the chicken in a 400 degree F preheated oven uncovered for 20 minutes.
Turn chicken and sprinkle the remaining herbs over chicken. Increase the oven temperature to 425 degree F and roast an additional 20 minutes.
