In a large heavy pot, heat the oil over medium heat until shimmering. Sauté the onion, carrots, celery, until lightly browned 7-10 minutes
Stir in the tomato paste. Cook until it starts to brown, 2-3 minutes
Add the bay leaf, thyme and lentils. Stir in 6 cups of water and bring to a boil over high heat.
Reduce the heat to medium. Simmer until the lentils are al dents , 20 - 25 minutes.
Season with the salt and pepper. Remove and discard the bay leaf and thyme sprigs.
Also calls for a diced fennel bulb.
