Beat egg whites on minute. Gradually Add sugar, food coloring, flavoring and cream of tartar. Continue eating on high until peaks form and meringue sticks to whisk.
Sift together almond flour and powdered sugar TWICE.
Gently fold in flour mixture. Batter should be smooth and flow like lava.
Pour batter into tipless piping bag.
Holding bag upright, pipe meringue onto silicone mat on a cookie sheet.
Lift pan and drop onto counter several times to release any bubbles. Add sprinkles to half the cookies if desired.
Let cookies rest 20-60 minutes until not sticky to the touch.
Bake at 300° for 14-17 mins.
Let macarons rest on baking sheet 15 mins or more before filling.
Can be stored in fridge in air right container up to 6 weeks.
Add 2 tsps, ginger, 1 tsp cinnamon, and 1/2 tap nutmeg for gingerbread cookies.
Fill with buttercream, ganache, or cream cheese icing.
