Saute onions in butter in a large pot or pan until tender. Combine together in soup pot: beef broth, salt, and thyme. Simmer until hot through and flavors are blended. Add salt & pepper to taste.
Serve with garnish of Parmesan cheese, with whole grain bread, sourdough bread or rolls, pumpernickel bread.
