Wonderful flavoured soup perfected by my friend Elena
Using a large heavy pot sauté all the onions and basil until golden brown and soft. Add beef broth and heat until boiling. Mix in beef gravy and dry sherry and serve with toasted croutons on top with shredded mozzarella and then put under the broiler until bubbly and brown.
