- Slice onions
- Gently saute the onions in all the butter, until they're tender
- Add finely chopped garlic and herbs until the onions and continue cooking until the onions caramelise
- Add *hot* stock slowly, while stirring
- Cover and simmer for 30 minutes.
- Use Olive Oil instead of Butter and Vegetable Stock instead of Chicken if you want to make this vegan
- Traditionally this is served with a thick slice of toasted baguette with melted cheese floating on top
- Picky kids? Use a stick blender to puree this soup so it's smooth - that way they won't know they're eating onions but it'll still taste amazing
