This is the best way I know to use up excess tomatoes in the summer!
Use a large GLASS bowl
Dice tomatoes, onions, and mushrooms into bite sized pieces
Mince garlic
Chop fresh basil
Combine ingredients into glass bowl
Add approximately ? cup of olive oil
Pepper and crushed red to your taste
Cover top with light coating of salt (it pulls out the juices and flavor)
Stir with wooden spoon until well mixed and cover with plastic wrap.
Leave on counter at least 18 hours (do not refrigerate), stirring a few times
Serve over penne or ziti, sop up the juices with fresh baguette.
