Suggest a better descriptionSpray a 6 inch crepe pan with cooking spray. In a small bowl, toss strawberries with sugar. Set aside.
Beat egg and blend with milk, flour and oil until smooth and the consistency of cream. If it's too thick, add a little milk. Cover batter and let it stand for 3 minutes.
Pour in just enough batter to coat the bottom of the pan, tilting pan so batter spreads evenly. Cook crepe on one side, (wait until the edge just starts to turn up and look like paper) then turn it and brown the other side. Remove from pan. Repeat until all batter is used. (to make 8 crepes). Place crepes between layers of wax paper or paper towels to keep warm.
Spoon 2Tbsp Strawberries into each crepe. Fold sides up over fruit and roll crepe over so the seam is on the bottom.
