A food processor makes this recipe super-easy!
1. Shred potatoes and onion in food processor.
2. Use cheesecloth or paper towels to wring out liquid.
3. Transfer to large bowl and mix well to evenly distribute onion.
4. Add remaining ingredients, except oil, to potato and onion mixture and mix well.
5. Heat olive oil over medium heat.
5. Form 3-4 medium-sized balls, add to pan, and flatten each with a spatula.
6. Fry each side for about 5 minutes, until golden brown.
7. Repeat steps 5-6 with remaining batter.
