Suggest a better descriptionPreheat oven to 350. Coat 9x5 pan with cooking spray.
Beat shortening, brown sugar, and sugar in large bowl at medium speed until light and fluffy. Beat in egg, bananas, and vanilla just until combined.
Stir flour blend, baking powder, xanthian gum and salt in small bowl. Gradually beat flour mixture into banana mixture just until combined. Stir in coconut and walnuts (and extras if adding.)
Spoon batter into pan. Bake for 60 minutes or until done. Cool in pan for 5 minutes then remove to wire rack.
May add 1/2 cup crushed, drained pineapple and/or chocolate chips if desired.
