Deshuesar la pata de cordero sin abrirla (coulee). Retirar la glandula. Sazonar. Introducir los dientes de ajo blanqueados y las hierbas. Atar y sellar con aceite de oliva junto con el souris de cordero. Terminar la cocción en horno, rociando la carne continuamente con su jugo. Retirar la carne y dejarla reposar. Desglasar la asadera con vino blanco y realizar un jugo.
Salsa:
Pelar los dientes de ajo y retirar el germen. Blanquearlos 5 veces, luego cocinarlos dentro de la crema. Condimentar y procesar.
Papas rejilla:
Cortar las papas en rejilla, freir en aceite a 180ºC, retirar, colocar sobre un papel absorbente y salpimentar.
Habas:
Saltear las habas peladas en una sarten con la cebolla picada finamente y una ramita de tomillo.
Montaje:
Colocar la crema de ajo en forma circular sobre un plato. Apoyar encima 2 rodajas de cordero. A un lado del plato, disponer las papas rejilla y las habas. Rociar con un hilo de jugo de cordero.
