Rich in omega-3 fats, haddock is a firm, moist fish that takes flavors well. You may also substitute cod or flounder if haddock isn’t available.
In a small bowl, combine 1 tablespoon olive oil, mustard, ginger, honey, vinegar, soy sauce, and orange juice. Add fish filets and cover. Allow to marinate in refrigerator for 1 hour.
Heat a large, heavy skillet on medium-high heat. Add remaining olive oil and heat for 1 minute. Add fish filets (reserving marinade), then arrange the scallions and tomato around edges of the pan. Cook for 1 minute.
Turn the fish over, turn heat to low, and pour marinade over all. Cook covered for 3 minutes.
Serve haddock with vegetables and sauce ladled on top.
