My interpretation of a great salad from a local restaurant....
1. Honey orange vinaigrette: In a small jar with cover, combine the orange juice, vinegar, mustard, honey and pepper. Cover and shake well until combined. To store, refrigerate for up to 1 week. Shake well before serving.
2. Slice Strawberries and place on plate of greens.
3. Candy the Nuts: chop nuts until small size; combine all ingredients and saute til toasted; watch for burning. Sprinkle on salad.
4. Goat Cheese: Put goat cheese in freezer 15 minutes. Saute garlic in butter; remove from heat; add breadcrumbs; slice goat cheese into rounds and coat each piece in breadcrumb mixture; Bake at 425 degrees for 6 minutes, or till just soft/warm. Place on salad;
5. Serve with dressing.
