Suggest a better description1. Fill large pot halfway with water and bring to boil. Add a potatoes and reduce heat to medium-low. Cover and simmer until tender, about 30 min. Drain well and set aside.
2. Meanwhile, In a food processor, process bread into fine crumbs. Transfer crumbs to a small bowl and set aside; wipe out food processor.
3. Prepare pesto: in a food processor, process chives, seeds, oil, and salt until well blended, stopping to scrape down sides of bowl as needed, set aside.
4. Prepare gnocchi: preheat oven to 350*F and line 2 large baking sheets with foil. Transfer potatoes to a large bowl. With a potatoe masher, mash potatoes until smooth. Add bread crumbs and egg whites and mash until well combined. Scoop 1 tbsp mixture and roll lightly between your palms to form an oblong ball. Transfer to a baking sheet. Repeat with remaining mixture to form 48 balls, dividing mixture among sheets and leaving 1 inch between each. Bake until bottoms are lightly browned, about 20 min.
5. Meanwhile, fill a medium pot halfway with water and bring to a boil. Add carrots and reduce heat to medium-low. Cover and simmer until tender, about 5 minutes. Drain and set aside.
6. Transfer gnocchi to a separate large bowl and add pesto. Toss gently to coat and divide aming serving plates. Top with shrimp and carrots, dividing evenly.
