Gooey Butter Cake
1. Preheat oven to 350°F
2. Mix cake mix, melted butter, 1 teaspoon vanilla, and 2 eggs with a spoon
3. Pat into a 9 x 13-inch baking pan to form the cake layer (glass works best. Crisco that bitch really well beforehand)
4. Mix cream cheese, remaining 2 eggs* and 1 teaspoon vanilla with an electric mixer (or whisk if you want to stand there beating it like crazy. I don't know your life.) Sloooowly beat in powdered sugar (fucking seriously, you will regret it if you do it all at once.) Pour over cake layer**
5. Bake 35-45 minutes***. Let cool for a couple hours before cutting or it will just splooge errywhere
Notes:
*if you want a more gooey top layer just use one egg instead of two
**blend sugar with cream cheese first to avoid lumps, then add egg and vanilla
***I've found that you need to tweak this depending on the oven. Check it at 30 min, then again at 35 min, etc until it's golden brown and the edges look a little crispy. It will be more done on the outside.
