A layered graham cracker bar cookie with a coconut filling and a simple confectioner's icing. These were my grandfather's favorite cookies.
For the bottom layer: Line the bottom of a 9 x 13 pan with graham crackers.
For the filling: Cook to a boil: granulated sugar, 1/2 cup milk and the beaten egg. Remove from the heat and stir in the coconut, nuts, and ground graham crackers. Spread over the graham crackers in the 9 x 13 pan.
Top with another layer of graham crackers.
For the icing: Combine butter, sugar, vanilla extract, and enough milk for spreading. Spread on top of the graham crackers.
Chill in the refrigerator for several hours and keep in the refrigerator until serving.
Granny's notes said that the icing set up so quickly that she often make a little more to cover all.
These freeze well.
