Preheat oven to 400F. In medium sauce-pan, slowly bring 1 cup water with butter and salt to boiling
Remove from heat. With wooden spoon, beat in flour all at once. Return to low heat; continue beating until mixture forms ball and leaves sides of pan
Remove from heat. Beat in eggs, on e at a time, beating hard after each addition until mixture is smooth.
Continue beating until dough is shiny and satiny and breaks in strands
Drop by rounded tablespoonfuls, 2 inches apart, on ungreased cookie sheet
Bake until puffed and golden-brown-45 to 50 minutes/ Puffs should sound hollow when lightly tapped with fingertip
Let cool completely on wire rack, away from drafts
Cut in half and fill with cream
Cream:
Make pudding according to package instructions and let sit, about 5 minutes. Once pudding has set, mix in rum extract. After, gently fold in the cool whip until combined.
Any dairy milk will work, but in my experience, non-dairy alternatives will not allow the pudding to set, and the rum cream becomes very runny.
