This student's grandma used to make tamales for her whole village!
Filling Preparation:
Blend tomatillos, garlic, onion in blender to make green sauce
Heat lard and add sauce
Boil chicken until cooked through and shred, add to green sauce with a bit of chicken broth, salt and pepper to taste
boil chicken and green sauce until it reduces and becomes a bit thicker
Tamale Preparation:
Beat lard until spongy
add tamale flour, some broth and tomatillo skin water until it is a consistent paste
add salt to taste
Final steps:
put some tamale paste in a wet corn husk
add some filling to the middle
wrap tamale, repeat until done
Steam cook for approx. 1 hour
