Classic pancakes
Mix dry ingredients.
Add the beaten egg and half the milk and stir until combined.
Add more milk until batter reaches desired consistency. I generally use a bit more milk to keep the pancakes on the thin side.
Cook on griddle at 425F
Variation:
Add 1 grated apple at the end to make apple pancakes.
