Combine first 5 ingredients and start simmering uncovered. In hot oil, sauté onions and garlic until lightly browned. Add beef and 2 tsp. salt. Cook until beef looses red color. Add to sauce and simmer uncovered 2-1/2 hours until thickened.
Cook noodles; starting with sauce layer noodles and half of ricotta -1/3 mozzarella and half of parmesan. Repeat ending with suace. Top with remaining mozzarella.
Divide everything in half-this makes 2 pans.
Bake at 350* for 50 minutes or until bubbly. Let stand for 15 minutes.
Can substitute cottage cheese with egg added in place of ricotta cheese.
