Keep 1 onion aside for Cutlets after preparing as below.
Tomato Gravy:
To prepare Tomato puree if needed, boil the tomatoes in about 1 1/2 cup water and when soft remove, cool and mash it up well and strain the juice. Or use a Liquifier.
Saute the onions until light brown in color, then add ginger-garlic paste, chili powder, salt and stir. Add a little tomato juice if needed when frying the g-g paste in onions. Add rest of the tomato juice, stir and let it cook on high heat for a while, then lower heat as it thickens. Add in Sugar and Vinegar and cook a little while longer till it thickens to consistency needed (like thick soup).
Cutlets:
Soak the slices of bread in water, then remove it from water, squeeze out excess water and mix with onions, salt, 1/4 tsp chili powder and cilantro. Flatten into oval shapes on a board with a little flour or semolina so that it does not stick.
Beat the egg white separately till fluffy, then add yoke and mix. Dip each cutlet in the egg batter and fry in non-stick pan with a little oil. Turn and fry each side until brown.
Cutlets and then be dipped into the Tomato Gravy and served or eaten hot on a slice of bread!
