Heat 1 T oil in a large pan over medium high heat
Add mushrooms and stir-fry 1 minute
Use slotted spoon to place mushrooms in a medium bowl and set aside
Add 1 T oil to pan and add onion and stir-fry 1 minute
Spoon cooked onion into bowl with mushrooms
Add remaining 1 T oil to pan and add green beans and gently stir-fry until bright green and glossy with oil
Reduce heat to low, add chicken broth and sugar, and cover pan
Simmer until beans are tender, 10-20 minutes, stirring occasionally
Add cooked onion and Mushrooms, soy sauce and sherry and stir to mix
Increase heat to medium high and stir-fry until most of the liquid has evaporated,3-5 minutes
