Mild tasting chicken is given a flavour boost by rubbing it with curry powder and serving it with an Asian-style, sweet and sour rhubarb sauce
Place all ingredients , except rhubarb and curry, in a small pot and whisk until smooth, stir in the rhubarb. Bring to a gentle simmer and cook until the rhubarb is tender but still holding it's shape. Cover and reserve on low. Brush chicken with oil, sprinkle and rub curry powder and salt. Oil the grill and grill the chicken 3-4 minutes per side or until cooked through. Serve chicken topped with rhubarb sauce.
