precooking meat in bring before grilling greatly reduces the grilling time - great for when it's too hot to stand over a grill!
Bring 6 quarts of water to boil in a stockpot. Stir in sugar and salt until dissolved. Add smashed unpeeled cloves from 1 head of garlic. Add meat. Boil until cooked through and tender at the bone:
20 minutes for chicken
30 minutes for pork ribs
40 minutes for beef ribs
While meat boils heat grill. Transfer meat to wire rack and let stand to dry after it has cooked through.. Brush meat with olive oil and season with salt and pepper or use a dry rub.
Turn meat a few times on grill until charred in spots approximately 5 to 10 minutes. Meat can be brushed with bbq sauce in last few minutes of grilling.
