For Sauce:
3/4 cup dry white wine
1 T minced Shallot
1 cup heavy cream
3 T dijon style mustard
freshly ground white pepper
Grill:
Make sauce: In heavy saucepan boil wine with shallot until reduced to 2T. Add cream, bring to boil & simmer 2 min or until thickened slightly. Strain sauce through fine serve into bowl & whisk in mustard & white pepper. Salt to taste.
Cut tenderloins into 1/2 slices with mustard cream sauce
