Suggest a better descriptionHeat oil in pan, add onion and garlic and soften for 5 mins. Add courgettes, aubergine, peppers, cumin and paprika and cook for 5 mins further. Add tinned tomatoes, tomato purée, chilli flakes, honey, salt and pepper. Put lid on pan and simmer for 30 mins. Preheat grill to very hot. When sauce thickened place thin cut halloumi on top of sauce and spray with oil. Put under grill for 5 mins. Garnish with basil.
