Suggest a better descriptionStew a chicken with chopped onion, carrots, 2 potatoes & a chopped leek. Save the broth & veggies, remove chicken from bones and dice. Thicken broth with some cornstarch to make a light gravy. Add chicken and veggies. Wash 4 small pumpkins. Cut the tops off and scrape out seeds. Fill with chicken mixture. Using your favorite pie crust recipe, roll out 4 small rounds to cover tops of pumpkins. Decorate with pie-crust leaves. Place pumpkins and tops on a foil lined cookie sheet. bake @ 450 for 15 minutes, then lower to 350 and bake 15 minutes more. Turn off oven but let pumpkins sit in oven for 5 more minutes.
