Suggest a better descriptionSubmerge one large head of cabbage in water, bring to a boil, turn heat to a slow boil and cook 30 minutes. Remove from pot and run under cold water to cool. Cut around core and break off leaves.
Sauté onions in shortening
In large bowl mix ground beef, rice, eggs & onions/shortening mixture
Mix well with wooden spoon.
Place a ball of mixture in cabbage leaf (thick end) and wrap remainder of leaf around it.
Chop up the small leaves remaining and place on bottom of 8 quart pot. Place cabbage rolls carefully on top.
Pour Tomato Juice Tomato Soup over the cabbages. Add additional Salt & Pepper and a sprig of Celery to the top.
Cover & Cook on High until it boils. Allow to boil for 10 minutes and then turn down heat and cook 1 hour with bubbles just breaking the surface.
Variation 1 – Includes stuffed peppers
After removing cabbage from boiling water put 2 large green peppers that have been cored and cleaned into the water & put on the lid. Let sit for ten minutes and then fill and place among the cabbage rolls. Add Tomato Juice, etc. and cook as before.
Variation 2 – Messy Stuffed Cabbage
Chop up cooked cabbage and place a layer on bottom of pot. Either layer cabbage with loose ground meat mixture or with balls made from the ground meat mixture. Top with a layer of cabbage, add Tomato Juice, etc. and cook as above.
