Easy and delicious way to use up leftover ham
Heat oven to 350.
Prepare rice per package directions. I make it in the microwave and use the same dish.
Set aside 1/4 cup each of the cheese and fried onions for topping.
Mix everything else together in a 8 x 8 casserole dish. Cover with foil and bake 25 minutes. Uncover, top with reserved cheese and onions, bake another 10 min.
