Preheat oven to 400?. Grease 11x7 baking dish. Pat beef, raw, into bottom of dish. Sprinkle with salt and pepper. Lay raw, peeled and sliced potatoes over meat. Lay cheese slices over top. Cover with soup. Cover with heavy-duty foil. Bake 1 hour. Remove foil; bake 15 minutes to brown top.
*To double recipe, use 2 lbs ground beef, 8 large potatoes, 2 cans of soup and 10 slices of cheese in a 13x9 pan.
