Mix 4 eggs, milk, and flour. Let sit overnight in refrigerator.
When ready to make, use 6-7 inch skillet and grease lightly for first crepe. use 2 tablespoons of batter per blintz.
Filling
Mix all other ingredients and chill overnight.
Put filling on crepe and fold like an envelope. Fry in butter.
Can be frozen unfried for months.
