Spin on a baked potato. The name comes from the Hasselbacken restaurant in Stockholm, where the dish was created. Comes out like thick potato chips.
Preheat the oven to 425°F.
Wash and dry the potato(s).
Depending on how many potatoes you are making, line a baking sheet, pan, or dish with either aluminum foil, parchment paper, a silicone mat, or use a baking stone.
If you have any common sense you will have been draining off bacon fat from the pound of bacon you cook every weekend, filtering it through a screen and saving in the refrigerator for cooking other things. This is the secret sauce that makes all food better.
Rub the potato all over with bacon fat, or if you don't pay attention to these tips that make life better, rub it with olive oil and sprinkle with pepper and kosher salt. Slice off a thin portion, about 1/4 inch, from the roundest side of the potato and set aside.
Pay attention when doing this next step. Place the potato on a cutting board flat cut side down and place a chopstick or wooden spoon on either side of the potato lengthwise. Make 1/8” thick slices, cutting down to the chopstick or wooden spoon. This way you do not cut through the potato, you just achieve the proper slices to fan out. If you don't do as you're told you will cut all the way through the potato and ruin the dish and your embarrassment will be painfully obvious.
Oil the flat side of the potato slice and put it flat side down on the lined baking tray. Place the fan sliced potato flat side down on top of the slice. This will make the potato fan out on the arch. Gently separate any slices that are touching each other. Make sure you don't separate the slices at the bottom.
Mince herbs like thyme, basil, and parsley. Add to the melted butter along with any seasoning you prefer.
Lightly brush the potato and in between slices, get in and around each slice as best you can. Season with kosher salt, fresh cracked pepper or seasoning of choice.
Bake for 30 minutes and then remove from the oven, baste again with your seasoning blend and continue baking for another 20 minutes. Potatoes will be crispy and golden brown. Top with any remaining butter, fresh herbs, cheese, bacon, and serve.
You can use whatever seasonings and herbs you like. Use cheese, bacon, or sour cream and treat it like any other baked potato, or just use butter and any herbs and seasonings you like. Can be made in many different ways.
