GRATE ALMOND PASTE IN A FOOD PROCESSOR AND PLACE IN A BOWL. ADD SUGAR AND EGG WHITES AND MIX WITH AN ELECTRIC BEATER UNTIL FULLY COMBINED. PLACE ON A GREASED OR NON-STICK COOKIE SHEET WITH A COOKIE PRESS OR MELON BALLER AND BAKE AT 325 DEGREES FOR APPROXIMATELY 14 MINUTES OR UNTIL NICELY BROWNED. REMOVE FROM COOKIE SHEET AND PLACE ON WAXED PAPER UNTIL COOL ENOUGH TO PUT IN COOKIE JAR. NOTE: THESE COOKIES FREEZE BEAUTIFULLY. RECIPE MAKES APPROXIMATELY 25 TO 30 COOKIES.
