A PASTRY WITH COCONUT AND JAM FILLING
Cream butter and sugar
Add oil
Add eggs and beat well sift in baking powder and flour and mix to a firm dough
Roll dough and cut using fluted cutter and place in patty pans
FILLING
1 1/3 (100g) cup desiccated coconut
1 cup water
½ cup sugar
3 cardamom pods
Apricot jam
Boil water, sugar, and cardamom until sugar dissolved and add coconut.
Cook a further 3-5 minutes and set aside to cool
Spoon approximately 1 tsp coconut filling in half of each cup
Bake at 180degrees for 15-20min or until done
Remove from oven and cool
